Juicy and flavorful homemade lamb kebab — a simple recipe that brings the flavors of Mediterranean cuisine directly to your table. Perfect for Shabbat, a family meal, or a backyard barbecue.
Ingredients
500g ground lamb meat
1 large onion, finely chopped
3 garlic cloves, minced
1/2 cup chopped parsley
1 tsp cumin
1 tsp sweet paprika
1/2 tsp black pepper
1 tsp salt
2 tbsp olive oil
wooden skewers soaked in water
Preparation method

In a large bowl, combine the ground lamb with the onion, garlic, parsley, and spices. Mix thoroughly until the mixture is uniform.

Place the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.

Preheat a grill or a grill pan over medium-high heat.

Shape the mixture around the skewers into a long log, about 10 cm in length.

Brush with olive oil and grill for about 4-5 minutes on each side, until the meat is golden and juicy.

Serve on a bed of warm pita bread, with tahini, finely chopped vegetable salad, and toasted pine nuts.
Tips
Tip #1 — Cold Meat: Work with minced meat straight from the refrigerator. Warmer meat is easier to shape on the skewers.
Tip #2 — Meat Substitution: You can replace lamb with beef — the result will have a milder flavor.
Tip #3 — Skewers: Soak wooden skewers in water for at least 30 minutes before use, so they do not burn on the grill.
Tip #4 — Grilling Time: Do not overcook — lamb dries out quickly. It is always better to have it golden on the outside and slightly pink in the center — that way it stays juicy.
