The terms should be precise, because they are not synonymous. "grass-fed" describes cattle raised on pasture and fed on grass, but in many parts of the world the term does not exclude a shift to grain fattening in recent months. "100% grass-fed" is grass only, from weaning to the end. "Organic" is a separate standard that mainly defines what is prohibited: no growth hormones and no antibiotics as a routine, with grazing requirements and monitoring of cattle welfare. Beef can be 100% grass-fed without being organic, and vice versa — organic that has been fattened on organic grains. Baladi's series is both things together.
The differences are noticeable
Studies conducted over the years indicate a consistent trend: compared to grain-fed meat, pastured meat tends to contain more omega-3 fatty acids, a more balanced ratio between omega-3 and omega-6, and sometimes also higher levels of CLA and antioxidants such as vitamin E and beta-carotene. The exact numbers vary between breeds, regions and seasons, but the trend repeats itself over and over again. There is no medical promise here - there is a simple principle here: what the animal eats changes the meat we eat.
Also in taste and texture the difference is noticeable. Pastured meat is leaner, with less internal fat, more texture and more character. Most of his cuts call for a pot or oven rather than a pan; Extremely thin cuts such as minut steak and minut sirloin are designed for quick searing.
